Isn't it amazing when food is naturally shaped like a bowl? It's like life's way of setting up the perfect pairing dish. It's a complete mystery how it took me the greater part of 25 years to experience a true oven-baked avocado, but it finally happened. And I must say, it did not disappoint. 

We experimented with some of our favorite ingredients and found these variations tasted the best. Enjoy!

Step 1:

Grab some avocados. We ended up using 2, but just in case the avocado isn't to your standards, grab an extra.

Step 2: 

Using a spoon, scoop out a larger size hole in the avocados to allow enough room for the egg (left side of photo).

Step 3:

- To make life easier, create a couple avocado size pockets in some tin foil to hold the avocados while you pour in the egg. 

- Then add an egg to each avocado half. Fill the avocado pit up just before it overflows, but don't force the entire egg if it doesn't fit. 

Step 4:

- Place the egg-filled avocados aside to begin preparing the toppings.

- Preheat the oven to 350 Fahrenheit

- Choose whichever variations you like, if not all of them 🙂 My personal favorite was the huevos rancheros. 


1) The Bacon Avocado Stuffer:

- Not much else is needed when bacon is the mix. Slice up some bacon into
 1" squares and cook to desired crisp. 

Then place on top of egg and prepare for oven bake.  

-Bake at 350 Fahrenheit for approximately 15 minutes

-Take out of oven and add a small pinch of chives to the top (if desired)

-Serve and Enjoy!

2) Huevos Rancheros Avocado Stuffer:

- Open a can of black beans, drain, rinse 

- Add enough beans to fill an avocado half (on top of your egg). 

- Then grate some mozzarella cheese (or desired cheese) on top.  

- Bake at 350 Fahrenheit for approximately 15 minutes. 

- Add your favorite salsa and a pinch of chives over the top (even sour cream if you're feelin' it).

- Serve and Enjoy!

3) Sun-Dried Tomato Basil Avocado Stuffer:

- Place 10-15 small sun-dried tomatoes on top of your egg portion   

- Bake at 350 Fahrenheit for approximately 15 minutes

- Take out of the oven and add a some shredded basil to the top (if desired).

- Serve and Enjoy!

4) Mozzarella Pesto Avocado Stuffer:

-Sprinkle a modest amount of mozzarella onto your avocado 

- Bake at 350 Fahrenheit for approximately 15 minutes

- Place a spoonful of your favorite pesto on top

- Serve and Enjoy!

simple and delicious.
