  • 1 cup almonds
  • 1 tbsp garlic powder
  • 1 tsp red chili/paprika powder
  • 1 tsp ginger powder
  • ½ tsp black pepper

  • 1 tsp thyme

  • 4 chicken breast halves (four small pieces, or two large pieces cut in half)
  • 1 Egg

Steps


  1. Take chicken breast out of fridge and let sit for 20 minutes. 
  2. Preheat oven to 375°F
  3. Prepare a baking sheet with parchment paper, brush with oil, and set aside.
  4. Combine the almonds, garlic, red chili/paprika, ginger, pepper, oregano, thyme, and salt in a food processor. Pulse until the almonds are small. Pour the mixture into a shallow bowl.
  5. Whisk one egg in another shallow bowl.
  6. Working with one piece of chicken at a time, dip it in the egg and then the almond mixture. Be sure to cover it completely and pat the mixture into each piece.
  7. Place each piece on the prepared baking sheet as you go. Drizzle olive oil over each piece—this will ensure crispiness.
  8. Bake for 22-25 minutes in the oven. Then, remove and let the chicken rest for three minutes. Serve hot and enjoy!
